Bikini Recipe
Makes enough for 10 guests
Ingredients for the Clementine Syrup (makes 750ml)
300ml newly squeezed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (produces 850ml, serving 10)
400ml premium vodka
100ml classic gin
150ml peach-flavored liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, for garnish
Mandarin essential oil, to finish
Method
For the Citrus Syrup: Put the listed ingredients into a pan, heat until it reaches a light boil, agitating until the sugar dissolves. After that, take off the burner and leave to cool down completely. Transfer into a clean bottle, seal and refrigerate it in the refrigerator, it can be stored for around one month.
To make Cocktail Base: Combine all the liquids into a sizeable container, leave to sit for an hour, then filter it best through cheesecloth, to ensure it's fully clarified.
For serving: Measure 85ml of the batch mix to a mixing glass packed with ice, and stir carefully for about 60 seconds to cool it down. Strain to a chilled martini glass or a similar vessel, garnish with the cranberries adding the final touch by giving it a light spray of the essential oil over the drink.
